The coconut, “tree of life,” is used in many ways. The sap of niyog becomes tuba, and fermented further, vinegar. The flesh is eaten, and also grated by means of a panloob, put into the anrolan and pressed to yield its milk called gata, which is used in cooking and, with some sugar or honey, becomes pulot-gata or santan. Cooked with salt, it is bolostagac. The grated flesh is made into sweets like bokayo or used to accompany rice cakes and other snacks. It is cooked into coconut oil, and even the latik left in this process becomes a separate food.
Other uses go beyond the table. The husk, bonot, is a cleaning/scrubbing medium. The leaf midrib is versatile (for making brooms, for holding leaf packets together, etc.), and the coconut shell becomes scoops, tumblers, water containers, of many names: bao, hongot, paanabyaban, panabo, lungbo, lumbo. Luzon Bleeding-heart: Gallicolumba Luzonica
Now this is a cool looking Columbiforme! Some fun facts on their ecology: This bird gets it’s name from where it lives – Luzon in the Philippines, where it is also endemic. It’s name is also clearly derived from the red patch on it’s breast. These guys loves seeds and play an important role in seed dispersal. They can live about 15 years in the wild, and a long 25 in captivity. Finally these birds are monogamous and have about 2 eggs a season. I snapped a shot of this fellow at the Rosemond Gifford Zoo in Syracuse, NY.

You say potato, I say putato.
Did you know that September is National Potato Month? Did you know that September is also National Rice Month? Neither did I. It’s kind of ridiculous how many official food holidays there are.
That makes this the perfect photo to celebrate both.
Puto is a Filipino steamed rice cake often eaten as dessert or breakfast. It is also a derogatory term in Spanish for gay men or prostitutes, but I assure you these puto are not prostitutes. This photo is what happens when you buy too much puto and have too much time.
Enjoy and share because sharing is nice, and puto is rice.
